## Our Story

Tory Delaney left Dublin, Ireland at 20 years old with a suitcase and a dream. She landed in New York City, started as a hostess, and worked her way up to general manager within a year. Over the next two decades, she and partner Darren Shore built 8 restaurant concepts across Manhattan — including The Malt House (themalthousefidi.com) in Greenwich Village and Mezcali (mezcalinyc.com) in the Financial District.

In 2025, they brought their craft to Lakewood Ranch, Florida, opening Allswell Waterside — a gastropub where the bespoke bar, handcrafted finishes, and 1970s Irish postage stamp wallpaper reflect their heritage and love for hospitality. The community of Waterside Place reminded them of home.
